I’ve talked plenty about my love of homemade chicken salad.  It’s a staple in my rotation and I almost always have it on hand for lunches.  On Meal Prep Sunday, I usually make a big batch of shredded chicken in the Instant Pot, which is perfect for tons of recipes, but especially for making different varieties of chicken salad.

If you’re on a round of Whole30 or just trying to eat clean, I recommend putting this curried chicken salad on your menu!  It’s full of flavor, protein, and healthy fats, and never leaves you craving something extra.  Between the creaminess of the homemade mayo and the crunch of the apples and almonds, it is super satisfying on its own or over some fresh greens or lettuce.

Ingredients

  • Cooked boneless, skinless chicken breast – make your own shredded chicken or use rotisserie chicken)
  • Homemade avocado oil mayo – store-bought avocado oil mayonnaise if fine too or substitute plain Greek yogurt
  • Apples – I like Fuji apples, but any variety will work
  • Slivered almonds
  • Curry powder
  • Cilantro (optional)

How to Make Curried Chicken Salad

  1. Begin by making the mayo (or skip if using a store-bought version).
  2. Stir the curry powder into the mayo, mixing until well combined.
  3. Add the chicken, finely diced apples, and almonds to a large bowl. Stir in the curry mayo until completely combined.
  4. Add the cilantro, if using, and season with salt and pepper to taste.

Ingredients 

  • 2 heaping cups shredded chicken breast
  • 4 tablespoons Whole30 Mayonnaise, see recipe below
  • 1 tablespoon curry powder
  • 1/4 cup finely diced apples
  • 1/4 cup slivered almonds
  • 1 tablespoon chopped fresh cilantro

Instructions

  • In a small bowl, stir together mayo and curry powder.
  • Place remaining ingredients in a large bowl.  Add curry mayo mixture and stir well to combine.  Add salt and pepper to taste if desired.
