This lightened up version doesn’t sacrifice flavor or richness and is significantly lower in fat and calories. Pasta, chicken, and broccoli are simmered in a fat free mixture of broth and milk. A smidge of low fat cream cheese and parmesan is stirred in at the end of cooking. That’s all it takes to create this tasty dish. Light, yet hearty enough to satisfy your hungriest eaters!
- 2 boneless skinless chicken breasts, diced
- 2 cups broccoli florets
- 12 oz dried pasta (any shape)
- 2 cups low sodium chicken broth
- 1 1/2 cups skim milk
- 1 tsp minced garlic
- 1 tsp salt
- black pepper to taste
- 1 tablespoon low fat cream cheese
- 1/3 cup parmesan cheese
Spray a large deep skillet with cooking spray and cook chicken over medium high heat until no longer pink.
Add broccoli, pasta, broth, milk, garlic, salt, and pepper and bring to a boil. Reduce heat and simmer 10-12 minutes, stirring occasionally until pasta is cooked al dente.
Stir in cream cheese and parmesan. Serve immediately.
