Welcome and thanks for being here!

 

My Story…

As someone who has always been interested in nutrition and healthy living, I started developing recipes over the years that fit a clean eating lifestyle but were also simple and would work for my picky kids and husband.  Along the way, I learned how to feed my family well without spending tons of time at the stove fussing over complicated meals.  Then I discovered Whole30 and it was life changing.  Since adopting a Paleo/Whole30 approach to cooking, I feel better than ever, have tons of energy, and took a stab at living my dream by starting this blog (which was super scary and exciting all at once!)

In short, I believe in using WHOLE FOODS in EASY RECIPES that EVERYONE LOVES.  I truly believe that food can be healing to the body, but I also love and live by the 80/20 rule, because we all deserve some treats in life. 🙂

My Reasons for this Blog…

Here you will find plenty of Whole30 & Paleo style meals, real food recipes, and other tips for healthy living.  I hope to inspire others to love cooking and clean eating in a way that is approachable and simple!  As a Mom of two girls, I know the importance of making meal time not just healthy, but family friendly.  Cooking separate meals to please different members of the family just doesn’t work for me!  The recipes you find here are designed to be eaten and loved by kids as well as adults.

Finding a healthy balance in life can be challenging – we can all use a little help in that department!  I’m passionate about sharing time-saving nutritious recipes and tips with those who want to live a healthy life without added meal time stress.

A Few of My Favorite Things…

  • Loves: Lake Michigan beaches, 80’s Music, pizza w/black olives, Christmas movies
  • Workouts: Long walks and yoga
  • Can’t live without: peppermint lip gloss, flip flops, & my favorite green tea
  • Stress relievers of choice: a good book & glass of wine
  • Season: Summer…I love sunshine & thunderstorms equally 
  • TV Show: This Is Us.  I am obsessed!!!

Final Thoughts…

    Just made your Barbeque Chicken Quinoa Bake, and, while tasty, the chicken was a bit dry. I followed the recipe exactly, but have a question or two. Do you cover this casserole while it bakes? There was no salt or pepper mentioned. How big are the chicken pieces? What could I do to make it a little saucier? Thanks for your help

      Hey Cammi – In response to your questions…no, I don’t cover the casserole. There is no salt and pepper included because the barbecue sauce is pretty flavorful, but you could certainly season to taste! I cut the chicken into bite sized piece chunks. If you prefer it saucier, just increase the barbecue sauce and water by about 1/4 cup. Hope that helps and thanks for the feedback!
