Air Fryer Chicken Meal Prep – perfectly juicy chicken breast cooked in the air fryer and prepped for easy healthy make ahead meals! 

Meal Prep is often my solution for getting through the busiest of weeks. With just a bit of extra time on the weekend spent prepping a few items for make ahead meals, I save myself tons of time and hassle on hectic days. Lately, I’ve been loving this Meal Prep Air Fryer Chicken Breast for building quick lunches throughout the week.

A very simple rub adds tons of great flavor and the Air Fryer cooks the chicken to perfection every time! I like to cube the cooked chicken so it’s easy to add to salads, rice bowls, and build your own bento box lunches with prepped veggies and fruit.

How to Cook Chicken Breast in the Air Fryer

First, prepare the seasoning rub/marinade by combining olive oil, Homemade Seasoned Salt, and lemon juice.

Coat the chicken breast in the seasoning mixture and refrigerate for at least 15 minutes (up to 24 hours.)

Arrange the chicken breasts in the Air Fryer (2-3 at a time or whatever fits comfortably depending on size.)

Cook for 6 minutes at 370 degrees, flip the chicken and cook for an additional 4-9 minutes, or until the internal temperature reaches 165 degrees (thicker chicken breasts will require longer cook time.)

Swaps & Substitutions

Try any of my Homemade Seasoning Blends in place of the Seasoned Salt for a different flavor profile on the chicken.

Make Air Fried Blackened Chicken using my blackened seasoning with olive oil or avocado oil.

How to Meal Prep Chicken

Chicken is so versatile, making it a great choice for meal prep. It can be flavored and cooked a variety of ways and is prefect for mixing and matching with different carbs, veggies, and fruits to build easy meals. In addition to this Air Fryer method, I also like to use the Instant Pot for meal prepping chicken breast, especially for shredding. The grill is another favorite method using these Healthy Chicken Marinades.

Whatever method you choose for cooking, chicken can then be chopped, sliced, or shredded, and added to salads, burrito bowls, soups, or protein bowls.

Can I Double This Recipe?

Yes, absolutely! This recipe is for 1 lb of chicken but if you want to meal prep a larger amount, just double (or triple) the ingredients. You’ll need to cook the chicken in batches, arranging 2-3 chicken breasts at a time (depending on the size.)

Air Fryer Chicken Meal Prep

Air Fryer Chicken Meal Prep - perfectly juicy chicken breast cooked in the air fryer and prepped for easy healthy make ahead meals! 

Ingredients 

  • 1 lb boneless skinless chicken breasts
  • 1 tablespoon Homemade Seasoned Salt, see recipe below
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon lemon juice

Equipment

Instructions

  • In a small bowl, combine the seasoning, oil, and lemon juice.
  • Coat the chicken breasts with the seasoning/oil mixture and refrigerate for at least 15 minutes (longer is fine!)
  • When ready to cook the chicken, remove from the refrigerator ad let sit at room temperature for 5 minutes.
  • Arrange chicken breasts in the Air Fryer and cook at 370 degrees for 6 minutes.
  • Flip the chicken and cook for an additional 4-8 minutes (depending on the thickness of the chicken) or until internal temp is 165 degrees.
