Yep, only 3 ingredients and you can have the most delicious chicken tenders that are perfectly crispy on the outside and juicy on the inside! You’ll need boneless skinless chicken breasts, beaten egg, and pork panko to throw together these chicken tenders.

How to Make Low Carb Breading (Pork Panko)

Pork panko will be your new best friend when it comes to creating a delicious crunchy low carb coating. My favorite pork rinds for making pork panko are Epic Brand, which are available in several seasoned varieties. Simply place them into a food processor (this mini food processor is great!) and pulse until they resemble fine crumbs. Pork panko is the perfect substitute for bread crumbs on a Keto or low carb diet.

How to Cook Chicken Tenders in Air Fryer

Begin by lining your air fryer with a parchment paper liner and place the breaded chicken tenders in the air fryer leaving some space in between pieces (this ensures even cooking.) Spray the chicken tenders lightly with oil (I like this avocado oil spray.) Cook at 400 degrees for 5-6 minutes, flip the tenders, spray, and cook for an additional 5 minutes. Depending on the number of chicken tenders you are cooking, you may need to do this in more than one batch.

Yes, of course. To bake in the oven, place the chicken tenders on a parchment lined baking sheet. Spray both sides lightly with avocado or olive oil spray. Bake at 425 degrees for about 15 minutes or until done, flipping once throughout cooking.

Ingredients 

  • 1 lb boneless skinless chicken breast
  • 1 egg, beaten
  • 1 cup pork panko, see instructions below
  • olive or avocado oil spray

Instructions

  • To make pork panko, place pork rinds in a food processor and pulse until they are fine crumbs and pour into a shallow bowl.
  • Cut chicken into strips and sprinkle with salt and pepper.
  • Dip chicken in egg, then pork panko,, coating on all sides. Place in the air fryer basket (lined with parchment) and lightly spray with the oil.
  • Set the fryer at 400 degrees and cook for 10-12 minutes, flipping once throughout cooking.
