When I think of spring and summer time food, this Avocado Feta Greek Salsa tops my list of go-to snacks.  Not that it isn’t delicious all year long, but something about the freshness of these Greek flavors just screams summer to me.  This Greek Salsa is excellent as an appetizer served with hummus or crackers but is also the perfect compliment to grilled chicken or fish.

What’s not to love?  Avocado, tomatoes, cucumbers, Kalamata olives, feta, fresh parsley, lemon juice, and a splash of red wine vinegar make a pretty tasty salsa.  If you’re looking for something easy to whip up for a party, this is it!  Just give everything a quick chop, combine, and done!  This Greek Salsa is always a hit every time I make it.  While I love to serve it with crackers or hummus as a dip, it is equally wonderful as a topping to grilled meat.

You can even make this Paleo/Whole30 compliant and skip the feta cheese.  For a Mediterranean inspired dish, grill some chicken or fish and top with this Greek Salsa.  So fresh and light and perfect for summer meals on the patio!

Ingredients 

  • 1 cup chopped cherry tomatoes
  • 1 large avocado, diced
  • 1/2 cup diced English cucumber
  • 1/4 cup diced red onion
  • 1/2 cup crumbled feta
  • 1/4 cup chopped kalamata olives
  • 1 tsp fresh lemon juice
  • 1/2 tablespoon red wine vinegar
  • 1 tablespoon avocado oil, or olive oil
  • 1 tablespoon chopped fresh parsley
  • salt and pepper

Instructions

  • Combine all ingredients together in a bowl.  Stir just to combine.  Do not over mix as avocado will break down and become mushy.
  • Add salt and pepper as desired to taste.
