A staple on every family holiday table at our house has always been a big platter of deviled eggs.  They’re always a huge hit and one of the first things to disappear.  Why deviled eggs were ever delegated to Easter and Christmas only, I have no idea.  I recently started making them on a more regular basis to have on hand for snacks or a quick breakfast.  Best decision ever!  There is something so satisfying about deviled eggs – they almost feel like a treat!  And with the power combo of protein and healthy fats, deviled eggs make the best snack option for Whole30 or Keto plans.

Instant Pot Deviled Eggs

I try to make meal prep a weekly thing.  It makes meal time less stressful and keeps my family on track with plenty of grab-and-go clean eating options.  But sometimes the idea of spending a couple hours on Sunday preparing food is not at the top of my list of favorite things to do!  To keep meal prep sessions from seeming too daunting or overwhelming, I look for shortcuts and hacks to get the job done easier. One of my favorite hacks is to make Hard Boiled Eggs in the Instant Pot (I’ll explain why below.)  I even created a quick and easy way to make Egg Salad in the Instant Pot with no boiling or peeling required.  So naturally, a recipe for Instant Pot Deviled Eggs was also born!

How to Get Your Hard Boiled Eggs to Peel Easy

My number one tip for easy to peel hard boiled eggs?  Cook them in the Instant Pot!  I think it has something to do with the steaming method, but when I cook eggs in the Instant Pot, the shells fall off like magic!  I used to get so frustrated when making hard boiled eggs on the stovetop and tried all the tricks to get the shells to peel easily – with little success.  Then I discovered the Instant Pot method and it is totally foolproof!

Simply add water to the pot, arrange your eggs on the trivet, and cook on the Manual setting for 5 minutes.

Let the pot depressurize for 3 minutes, then release remaining pressure and place the eggs in an ice bath for 5 minutes.  At that point, they are ready to peel.  You won’t believe how easy the shells fall off!

Best Deviled Eggs Recipe

My favorite recipe for deviled eggs has only 5 ingredients and is super simple to make.  The filling is a combo of egg yolks, avocado oil mayo, dill pickles and their juice, and Dijon mustard.  It’s ultra creamy, slightly tangy, and so delicious!  I prefer homemade Avocado Oil Mayo but there are lots of great store bought versions available now as well.  Just remember to check labels if you are following a Whole30 or Keto plan as many condiments from the grocery store have loads of hidden sugars and preservatives.  The addition of finely minced dill pickles and a sprinkling of paprika to finish make this recipe the best!

The Best Deviled Eggs - Instant Pot Method (Whole30 Paleo Keto) - my favorite easy recipe for the best deviled eggs and a surefire method for boiled eggs in the Instant Pot! A great Whole30/Keto snack!

Ingredients 

  • 6 large eggs
  • 3 tablespoons avocado oil mayo, or mayo of your choice
  • 2 tablespoons finely minced dill pickle
  • 1 teaspoon dill pickle juice
  • 1 teaspoon dijon mustard
  • sea salt , to taste
  • paprika

Instructions

  • Pour one cup of water into the Instant Pot.  Place the trivet in the pot and arrange the eggs on the trivet.
  • Cook on manual setting for 5 minutes.  When cycle is complete, allow 3-4 minutes of natural release then manually release remaining pressure.
  • Place eggs immediately in an ice water bath.  Wait about 5 minutes, or until cool enough to handle and peel the eggs.
  • Slice eggs in half lengthwise.  Remove yolks and place in a separate bowl.
  • Add remaining ingredients to the egg yolks and combine well.  Scoop or pipe egg yolk mixture into the egg whites.  Sprinkle with paprika if desired.
