Summer is my favorite time of year and I especially love all the food that goes with it – savory, grilled meats, fresh from the garden vegetables, and light and refreshing drinks. Today I’m sharing this Best Grilled Chicken Thighs Recipe and I hope you love it too!
Grilled Chicken Thighs Recipe
For this recipe, I start with the best quality boneless, skinless chicken thighs from Butcher Box. I marinate the boneless, skinless chicken thighs in a simple but flavorful rosemary Dijon marinade and grill them to perfection. This Grilled Chicken Thighs Recipe is totally versatile and can be changed up to meet your tastes/preferences (see tips and variations below.)
Grilled Chicken Thighs Marinade
If you’re a follower of my blog, this recipe may look a little familiar! My favorite marinade for grilled chicken thighs (and any meat!) is an old stand-by I created years ago for marinating turkey tenderloin kabobs. It’s a Rosemary Dijon marinade that brings the most delicious flavor to grilled meat. For this recipe, I scaled the marinade up a bit to accommodate a larger quantity of meat.
To make the grilled chicken thighs marinade, simply combine olive or avocado oil, coconut aminos (or soy sauce), dijon mustard, fresh garlic, and fresh rosemary. I’ve found that about 30 minutes of marinating yields great results, but the longer the better!
Tips & Variations on Grilled Chicken Thighs Recipe
Use skin-on or bone-in chicken thighs or chicken breasts, and adjust grilling time accordingly.
For non-Paleo/Whole30, replace the coconut aminos with lite soy sauce.
Serve with white rice, cauliflower rice, Rainbow Veggie Rice or Sheet Pan Ranch Veggies for a complete meal.
Try the marinade on pork or turkey tenderloin.
Double the marinade for grilling large batches of chicken thighs or other meat.

Best Grilled Chicken Thighs Recipe
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1.5 tablespoons avocado oil, or olive oil
- 1/4 cup coconut aminos
- 1.5 tablespoons Dijon mustard
- 1 tablespoon chopped fresh rosemary
- 2 teaspoons minced garlic
Instructions
- Combine avocado oil, coconut aminos, Dijon, rosemary, and garlic in a small bowl. Whisk well.
- Add trimmed chicken thighs to a large plastic bag or glass baking dish. Pour the marinade over the chicken and place in refrigerator for at least 30 minutes.
- Preheat grill to medium high heat. Grill chicken thighs for 4-5 minutes per side, or until cooked through.
