What You’ll Need

Ground Turkey

White Rice (uncooked)

Bell Pepper

Onion

Black Beans

Diced Tomatoes

Chicken Broth

How to Make Turkey and Rice Skillet

Begin by heating avocado oil in a large skillet. Cook the ground turkey until browned. Add the onion and bell pepper and cook for 2 minutes more.

Add the remaining ingredients to the skillet and stir to combine. Bring to a simmer, then cover the skillet and reduce the heat to medium low.

Simmer, covered, for 15-20 minutes, until rice is completely cooked.

Stir, then top with grated cheese and cilantro (if desired.)

Cheesy Ground Turkey & Rice Skillet - An easy one pan dinner that is hearty, family friendly, and loaded with veggies and protein.

Ingredients 

  • 1 tablespoon avocado oil, or extra virgin olive oil
  • 1 lb ground turkey
  • 1 small yellow onion, diced
  • 1/2 large green bell pepper, diced
  • 1/2 large red bell pepper, diced
  • 15 oz low sodium black beans
  • 15 oz diced tomatoes
  • 1 1/2 cups low sodium chicken broth
  • 1 cup jasmine rice, or plain white rice
  • 2-3 tablespoons grated raw cheddar cheese
  • 1 tablespoon Seasoned Salt , see recipe below
  • 1 tablespoon chili powder

Instructions

  • Heat oil over medium high heat in a large deep skillet. Add ground turkey and cook until browned, adding in the onion and bell pepper in the last couple of minutes of cook time.
  • Add beans, tomatoes, seasoned salt, chili powder, rice, and broth to the skillet. Stir well.
  • Bring to a boil, then reduce heat to low and cover the skillet.
  • Simmer for 15-20 minutes, until rice is cooked. Remove cover and sprinkle cheese over the top.
  • If desired, add chopped fresh cilantro before serving.
