Cilantro and lime are the perfect pair in this tasty marinade made from only simple, fresh ingredients.  A light and flavorful way to change up your chicken game!

This tangy grilled chicken makes a great meal on its own with a side of veggies and is also perfect in fajitas, tacos, over rice, and in salads.  I like to make a big batch of this on Sunday, then portion it out for weekday lunches.  For easy make ahead lunches, add a pre-cooked whole grain, some veggies, and other add-ins of your choice.  Here a few of my favorite combos for Make Ahead Cilantro Lime Chicken Bowls:

Cilantro Lime Chicken

Cilantro Lime Chicken (Whole30 Paleo) - a simple 5 ingredient marinade, full of flavor and easy to make.  Great for freezing as well! | tastythin.com

Ingredients 

  • 1-1 1/2 lbs boneless skinless chicken breasts
  • 3 tablespoons avocado oil (or olive oil)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped fresh cilantro

Instructions

  • Combine oil, lime juice, zest, salt, cumin, garlic, and cilantro in a small bowl.  Whisk well.
  • Place chicken breasts in a glass dish or ziploc bag.  Pour marinade over chicken and marinate for at least one hour in the refrigerator.
  • Preheat grill (or grill pan).  Grill chicken 4-5 minutes per side, until cooked through and no longer pink.
