This week I will be sticking to a Paleo/Whole30 plan as much as possible.  Christmas is only 9 days away and I know I will be indulging in plenty of goodies and decadent meals!  Also, everything here is made (or partially made) in the Instant Pot!

In this weekly series, I share what I’m prepping for the week ahead.  Pre-prepping is my secret for grabbing breakfast on the way out the door and makes packing lunches a breeze.  Not to mention it cuts the food budget and reduces the urge to cheat!

For me, meal prep involves making one or two breakfast and lunch choices for the week ahead, some healthy snacks, and a few ingredients for dinner.  If I have extra in-season produce, I will also prep and freeze it.  My meal prep sessions usually take an hour or two at the most and always include my favorite tunes cranked up in the background!

Clean Eating Meal Prep Guide (Week 9)

Breakfast/Snack: Perfect Hard Boiled Eggs in the Instant Pot – a staple in our house!

Breakfast/Snack: Make Ahead Smoothie Packets – totally customizable and so convenient.

Snacks: Carrots, Celery, Cucumber – with hummus 🙂

Lunch: Buffalo Chicken Casserole (Whole30 Paleo) – great for any meal, I’m hooked on this!

Lunch/Dinner: Hamburger Soup – a family favorite, makes enough for one dinner plus leftovers

Lunch/Dinner: Instant Pot Cool Ranch Chicken – use in tacos, salads, or add to chili!

Perfect Hard Boiled Eggs

What you will need: 1-2 dozen eggs

Make Ahead Smoothie Packets

What you will need: assorted fruit (berries, bananas, pineapple, etc.), spinach, greek yogurt (optional)

Buffalo Chicken Casserole (Whole30 Paleo)

What you will need: shredded chicken, spaghetti squash, veggie trio (carrot, celery, onion), eggs, homemade mayo, hot sauce, green onion

Instant Pot Hamburger Soup

What you will need: ground beef (or turkey or venison), veggie trio, Yukon potatoes, tomato paste, broth, diced tomatoes, green beans
