Since I’m always looking for ways to limit refined carbs in our diet, I created this gluten free version of Baked Chicken Meatballs and they are absolutely delicious. Seasonings: salt, pepper, onion powder, garlic powder
Olive Oil
How to Make Baked Gluten Free Chicken Meatballs
You’ll need just a few basic ingredients to make these baked meatballs. To keep this chicken meatball recipe gluten free, I simply substituted almond flour for the traditional breadcrumbs. Combine ground chicken, egg, almond flour, olive oil, and spices in a large bowl. Get in there with your hands and mix well! Roll the mixture into bite sized meatballs and bake in the oven for 25 minutes, until beginning to brown.
This recipe is so simple and easy, I like to double it and freeze the meatballs for quick weeknight meals. If you want to change up the flavors and spices, see the tips below for additional variations on this recipe.
Variations on Baked Chicken Meatballs
Add any of my Homemade Seasoning Blends to jazz up the flavor. The Cajun, Italian, and Mediterranean seasonings are a few favorites!
Substitute ground turkey for the chicken. Just as good!
For nut allergies, try oat flour instead of almond flour
If gluten is not a concern, feel free to substitute panko or breadcrumbs for the almond flour.
To freeze the meatballs, let cool after baking and flash freeze on the baking sheet until just frozen. Then place the frozen meatballs in a large bag or freezer safe container.
What to Serve With Chicken Meatballs
Serve with Instant Pot Spaghetti Sauce or Quick Homemade Marinara for dipping or over pasta/zoodles.
Pile over Mashed Potatoes and serve with a salad or roasted veggies.
Serve with Herb Roasted Potatoes and Carrots for a complete meal.
Add to soups like this Instant Pot Minestrone!

Used 3/4 tsp salt and 1/4 tsp pepper because I made them for my toddler. I flattened the small balls a bit too. I really like them! I’d probably cut the salt back to 1/2 tsp next time, but these are a great basic to have in the freezer. Thank you!
Love this healthy meatball recipe! Mine turned out moist, flavorful, and hearty, and tasted great tossed with some whole grain pasta!
