Easy Bruschetta Nachos

A fun twist on traditional bruschetta, these Easy Bruschetta Nachos are a quick and tasty appetizer or snack that will totally hit the spot. This tasty dish can be ready in under 15 minutes – customize the size of your batch depending on if it’s for 1 or 10!
Pita chips are topped with sliced tomatoes, fresh mozzarella, a drizzle of balsamic syrup, and fresh chopped basil. Since I don’t have nearly enough opportunities in life to make bruschetta, I invented these nachos to curb my frequent cravings for these favorite flavors. The beauty of this recipe is I can make a single serving batch for myself or a huge batch for a crowd. Okay, so the two may be pretty close in size, but you get the idea. 😉
These nachos are casual enough for a late night snack and elegant enough to serve at your next party. And although it’s very rare that I am on my own without the hubby and kids at meal time…if/when that ever happens, I would totally whip up a single batch, serve it with a glass of wine and call it dinner!
Easy Bruschetta Nachos
Ingredients
- Pita chips
- Fresh tomatoes, sliced, calamari or roma are great
- 4 oz fresh mozzarella, sliced thin
- 1/3 cup balsamic vinegar
- 4-5 leaves fresh basil, chopped
- Kosher salt
Instructions
- Preheat broiler. Spread pita chips evenly on a large baking sheet. Top with sliced tomatoes and fresh mozzarella.
- Place under broiler until cheese begins to melt and brown slightly (watch carefully - will burn quickly.)
- Meanwhile, place balsamic vinegar in a small saucepan over medium low heat. Bring to a simmer and cook for 3-4 minutes, stirring frequently until vinegar begins to thicken and form a syrup. Drizzle over nachos. Sprinkle with basil and kosher salt.
