When you’re in the mood for meatloaf but need to get dinner on the table a little faster, or just need some meal prep inspiration, these mini meatloaves are the perfect solution. They are gluten free with Italian inspired flavors and ready in under 30 minutes, perfect for a busy weeknight dinner or anytime you are craving a comforting meatloaf meal.
This is a very versatile recipe with simple ingredients and zero prep required – no chopping or soaking of bread needed! I love the Italian flavors in this recipe, but feel free to swap different seasonings or use ketchup/barbecue sauce in place of the marinara. Make these mini meatloaves on the weekend for a quick made ahead lunch during the week.

How to Make Mini Meatloaves
Begin by preheating the oven to 350 degrees and preparing a muffin tin with cooking spray.
Mix all the ingredients in a large bowl until just combined.
Fill the muffin cups with the turkey mixture. Flatten the tops slightly and spoon marinara sauce over the top of each meatloaf muffin.
Bake for 18-20 minutes. Cool slightly and remove from the muffin tin.
Substitutions & Variations on Turkey Meatloaf Muffins
Mini meatloaves are very versatile and are easy to modify according to your tastes. If desired, use a different seasoning blend and/or substitute ketchup or barbecue sauce for the marinara sauce in the recipe to change the flavor profile.
Substitute lean ground beef or ground venison for the ground turkey.
Use breadcrumbs or almond flour in place of the oatmeal.
Add 1/4 cup grated parmesan for an added flavor boost.
Add finely chopped spinach to the ground meat mixture for some extra veggies in your meal.
How to Freeze Mini Meatloaves
Cool the mini muffins completely and place in a freezer safe container or plastic bag. Place in freezer. When ready to eat, remove the muffins and thaw in the refrigerator before reheating for best results. They will keep well in the freezer for up to 3 months.
