Mix all the ingredients in a large bowl until just combined.
Fill the muffin cups with the turkey mixture. Flatten the tops slightly and spoon marinara sauce over the top of each meatloaf muffin.
Bake for 18-20 minutes. Cool slightly and remove from the muffin tin.
Substitutions & Variations on Turkey Meatloaf Muffins
Mini meatloaves are very versatile and are easy to modify according to your tastes. If desired, use a different seasoning blend and/or substitute ketchup or barbecue sauce for the marinara sauce in the recipe to change the flavor profile.
Substitute lean ground beef or ground venison for the ground turkey.
Use breadcrumbs or almond flour in place of the oatmeal.
Add 1/4 cup grated parmesan for an added flavor boost.
Add finely chopped spinach to the ground meat mixture for some extra veggies in your meal.
How to Freeze Mini Meatloaves
Cool the mini muffins completely and place in a freezer safe container or plastic bag. Place in freezer. When ready to eat, remove the muffins and thaw in the refrigerator before reheating for best results. They will keep well in the freezer for up to 3 months.
