Do you love homestyle breakfast potatoes but hate the hassle and time it takes to make them? Me too! I’ve found that the best and easiest way to enjoy breakfast potatoes, whether on a hectic weekday morning or when cooking for a crowd, is to make them ahead!
Although mornings are often rushed and a little chaotic, we try to have a quick breakfast together as a family. Often that means muffins or smoothies on the go. But occasionally, I can pull together a hot breakfast of scrambled eggs before everyone heads out the door. Sometimes sausage too, but homestyle potatoes are a pretty rare treat!
To make meal time a little easier, I always look for meal prep ideas that will shave some time off our morning routine. Sheet pan recipes are one of my favorite ways to prepare a hands free meal in very little time. To prep these breakfast potatoes ahead, simply roast them on a large sheet pan with bell peppers, onion, and my homemade all purpose seasoning blend. They can then be refrigerated and quickly reheated when ready to eat.
In the time it takes to scramble some eggs, these sheet pan potatoes can be reheated in a skillet for a warm, hearty, and nutritious breakfast to start the day. My other favorite way to reheat these breakfast potatoes is in the Air Fryer. Just pop them in for a few minutes for some super crispy potatoes!
Sheet Pan Breakfast Potatoes Recipe Tips & Variations
Use yellow or red onion in this recipe, or leave them out if you prefer.
Yukon gold potatoes can be used in place of the redskin potatoes if desired. They typically take a little less time to cook as they are naturally more soft.
Add some sliced kielbasa or chicken sausage to the pan in the last 10 minutes of cook time.

Easy Sheet Pan Breakfast Potatoes (Paleo Whole30)
- 2 lbs red potatoes cut into cubes
- 1 cup diced bell peppers any color(s)
- 1/2 small yellow onion, chopped
- 2 tablespoons avocado or olive oil
- 1 tablespoon Homemade All Purpose Seasoning see recipe below
- salt to taste
- Preheat oven to 425 degrees. Line a large baking sheet with parchment paper if desired.
- Add all ingredients to the baking sheet and toss well to combine. Spread into an even layer.
- Bake for 30-35 minutes, stirring 1-2 times during cook time. Serve immediately or let cool and refrigerate until ready to use. Reheat in a skillet with a drizzle of oil.
