Greek Chicken Salad with Pita Croutons

This wholesome salad contains only clean, nutritious ingredients and is packed with protein! My Greek Chicken Salad is the perfect make ahead lunch. I could seriously eat this everyday and be quite content. Here’s the thing…when I eat a Greek salad, what I’m really looking for is the tomatoes, olives, and cucumbers, and not so much the lettuce. I feel like the lettuce kind of gets in the way of all the other yummy stuff, right?? This recipe contains all my favorite good-for-you flavors, but is free of all that annoying lettuce. 😉
Chicken, tomatoes, cucumbers, and olives are coated in a tangy lowfat tzatziki dressing with just a smidge of feta for some extra saltiness…and topped with some homemade pita croutons to add a little crunch. Croutons optional of course, but totally worth it.
Greek Chicken Salad with Pita Coutons
Ingredients
- 2 chicken breasts, cooked and chopped
- 1/2 English cucumber, diced
- 1 cup grape tomatoes, quartered
- 1/2 cup black olives, sliced
- 2 feta cheese
- 1/4 cup plain Greek yogurt, lowfat
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tsp chopped fresh dill weed
- 1/2 tsp kosher salt
- pepper to taste
For optional pita croutons:
- 2 pieces pita pockets, cut into bite sized
- 1 tablespoon olive oil
- 1/2 tsp kosher salt
Instructions
- In a large bowl, stir together Greek yogurt, lemon juice, dill, salt, and pepper. Add chicken, cucumber, tomatoes, olives, and feta. Stir to combine and top with fresh parsley.
- For pita croutons:
- Preheat oven to 375 degrees. Place pita pieces on a large baking sheet and drizzle with olive oil. Sprinkle salt and garlic powder over top and toss to combine. Bake for 8-10 minutes until starting to brown.
