These quick and easy one bowl peanut butter cookies are my go-to when we need a little sweet treat. They can be mixed, rolled, and baked in under 20 minutes and contain only 4 basic pantry ingredients.  Add a few dairy free chocolate chips for an extra decadent and yummy combo or eat them as is!

My 4 Ingredient Peanut Butter Oatmeal Cookies are naturally gluten and dairy free. I’ve cut way back on the sugar in this recipe and added oats to make my version a bit healthier. Using natural peanut butter (no added sugar) is also a great way to avoid unnecessary sugars and calories in these already delicious cookies. Slight warning though, they will disappear fast! Natural peanut butter

Brown sugar

Oats

Egg

Optional Additions: chocolate chips, raisins, etc.

How to Make 4 Ingredient Peanut Butter Cookies

Combine peanut butter, brown sugar, egg, and oats in a medium bowl. Mix well until it a thick dough forms.

If desired, stir in mini chocolate chips or other add-ins.

Scoop or roll into 1 1/2 inch balls and place on ungreased baking sheet.

Flatten each ball slightly with a fork.

Bake at 350 degrees for 12 minutes.

Variations on Healthy Peanut Butter Oatmeal Cookies

Try adding a splash of vanilla before mixing for extra flavor.

Other nut butters (almond butter, mixed nut butter) can be used in place of the peanut butter.

Sprinkle a bit of flaky sea salt on the cookies after baking.

Pro Tips

Be sure to flatten the cookie dough slightly with a fork before baking. This allows the cookies to cook more evenly, as the dough will spread very little on its own while baking.

Don’t overbake. The cookies will look underdone at first but will firm up after sitting. Overbaking will result in dry, crumbly cookies.

Storage Instructions

Keep peanut butter oat cookies in an airtight bag or container. They can also be stored in the refrigerator.

What is Natural Peanut Butter?

Natural peanut butter is made with just peanuts and contains no added sugar. The ingredient list should include only peanuts (and sometimes salt.)

Can I make this recipe with coconut sugar or white sugar?

Yes, you may substitute coconut or white sugar for the brown sugar. Honey will work too, but the texture will be softer.

Can I use chunky peanut butter instead of creamy?

Sure! I have used both with great results.

Can you freeze peanut butter cookie dough?

Yes, after mixing the dough and rolling into balls, the dough may be frozen in an airtight bag or container for up to 3 months. The cookies can be baked from frozen but will require a few extra minutes of cook time.

Ingredients 

  • 1 cup natural peanut butter
  • 1/3 cup brown sugar
  • 1 egg
  • 1/2 cup oats
  • 1/4 cup mini chocolate chips, optional

Instructions

  • Preheat oven to 350 degrees.
  • Combine peanut butter, brown sugar, beaten egg, and oats in a large bowl. Stir well to form a dough. If desired, stir in mini chocolate chips.
  • Roll dough into 1 1/2 inch balls and place on a baking sheet. Using a fork, flatten the tops of each dough ball.
  • Bake for 12 minutes. Cookies will spread very little. Let cool on the baking sheet.
