Healthy Chocolate Chip Muffins (Paleo Gluten Free) – a healthier chocolate chip muffin recipe, naturally sweetened and perfect for breakfast on-the-go or an after school snack.  Tasty and fluffy, just like a bakery muffin – but free of refined sugar, flour, and dairy!

I love these Healthy Chocolate Chip Muffins as a quick breakfast or snack option!  I made these muffins healthier with some easy swaps and the result was easily one of my family’s favorite muffin recipes to date!

Ingredient Swaps for Healthier Muffins

With a few simple ingredient swaps, you can have healthier chocolate chip muffins that still taste like they came from the bakery!  Whenever possible, I try to substitute common processed ingredients with healthier options and more often than not, the swaps are totally undetectable!  For example:

In place of refined white sugar, use coconut sugar, pure maple syrup, or honey.

Instead of vegetable oil or butter, use coconut oil.

Rather than white flour, try oat flour or a Paleo Flour Blend.

In place of regular milk, use coconut or almond milk.

Swap these dairy and additive free chocolate chips for regular chocolate chips.

How to Make Gluten Free Bakery Style Muffins

It’s totally possible to make bakery style muffins without any refined flour or other source of gluten!  For this recipe, I use my Homemade Paleo Flour Blend and the result is a fluffy, tender muffin with a cake-like texture.  The Paleo Flour Blend came about because I was tired of spending a ton on prepackaged gluten free flour blends and/or measuring out several individual ingredients for every recipe.  I love creating less expensive shortcuts for myself – make it once and use multiple times!

Other substitutions work well for baking gluten free muffins.  I often use oat flour (again – make your own by grinding oats in the food processor!) in place of white flour when baking cookies and muffins with great results.  Or try one of the many gluten free all purpose flour substitutes available in the grocery store.  I have had good luck in the past with Bob’s Red Mill All Purpose Gluten Free Flour.

Healthy Chocolate Chip Muffins Recipe

Begin by preparing a muffin pan with cooking spray and preheating your oven to 400 degrees.

Next, combine all the dry ingredients in a large bowl – Paleo Flour Blend, baking powder, cinnamon, and salt.

In a separate bowl, combine the wet ingredients – egg, coconut oil, maple syrup, and coconut milk – and mix well.

Add the wet ingredients to the dry ingredients and stir until just combined.

Fill you muffin tin and bake for 18 minutes, or until muffins are a light golden brown.

Ingredients 

  • 2 cups Homemade Paleo Flour Blend, see recipe below
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/3 cup melted coconut oil
  • 1/3 cup pure maple syrup
  • 1/2 cup coconut milk
  • 1/2 cup dairy free chocolate chips, such as Enjoy Life brand

Instructions

  • Preheat oven to 400 degrees.  Prepare a muffin tin with cooking spray.
  • Combine dry ingredients in a large bowl and stir well.  Combine the wet ingredients in a separate bowl, stir, then add to dry ingredients.
  • Scoop mixture into muffin tray, filling about 1/2 full.  Bake for 18 minutes or until the muffins are a light golden brown.
