How to Make Healthy Freezer Breakfast Burritos

Healthier breakfast burritos begin with my homemade breakfast sausage, added veggies. plenty of protein rich eggs and grated raw cheddar. You can use any tortilla you like (the larger the better) but look for one that has minimal processed ingredients if possible. The best thing about homemade Freezer Breakfast Burritos is you can customize ingredients to your taste. See some of my ideas below or make your own rules! Homemade Healthy Breakfast Sausage

I was never a big fan of breakfast sausage until I started making my own. Typical store-bought sausage is too fatty for my taste and usually contains additives and sugar, not to mention the quality of the meat you find at the grocery store is questionable. While making homemade sausage may seem intimidating, it’s really so simple and just involves adding seasoning to good quality ground pork (or turkey.) Tips for Rolling Burritos

The larger the tortilla, the better! Alternatively, if using a smaller tortilla, also use less filling. You don’t want to overstuff your burritos!

Warm the tortillas before rolling. They are more pliable and easier to work with when warm.

Roll halfway from the long side, then fold in the ends and continue rolling tightly, so that the seam is facing down.

How to Freeze Breakfast Burritos

After the burritos are assembled, they should be laid flat on a baking sheet (it is not necessary to individually wrap each burrito) and placed in the freezer to flash freeze. Once they are frozen (or just partially frozen, but solid), the burritos can be transferred to a large freezer bag. Breakfast Burritos are good kept in the freezer for up to 3 months.

How to Reheat Freezer Breakfast Burritos

Freezer Breakfast Burritos can be reheated in the microwave, toaster oven, or Air Fryer. There is no need to thaw the burritos; they can be reheated directly from frozen using any of these methods. If you choose to let them thaw overnight in the refrigerator, the cooking time for all of these methods will be significantly reduced.

Microwave reheating: place burrito on a microwave safe dish and cook for 3-4 minutes. The magic number on my microwave is 3 1/2 minutes, but this will depend on your appliance.

Toaster oven reheating: heat frozen burrito for 10 minutes in toaster oven.

Air Fryer reheating: place frozen burrito(s) in the air fryer basket lined with a parchment sheet. Cook at 400 degrees for 12-15 minutes, flipping throughout.

Ingredients 

  • 8 large whole wheat tortillas
  • 1 lb ground pork
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 medium red bell pepper, diced
  • 8 eggs, beaten
  • 2 cups spinach leaves, chopped
  • 4 oz grated raw cheddar

Instructions

  • Preheat a large nonstick skillet over medium high heat. Add the ground pork and seasonings, crumbling the meat. Add the bell pepper and stir until pork is cooked through and peppers are softened. Drain any excess grease and set aside to cool slightly.
  • Wipe the skillet clean and preheat over medium heat. Add the beaten eggs and spinach. Cook and stir until eggs are set and no longer runny. Let cool slightly.
  • Assemble the burritos by placing equal amounts of sausage and egg mixtures onto each tortilla. Sprinkle 1-2 tablespoons of cheddar on top.
  • Folding the ends in, roll the burritos tightly and place seam side down on a large baking sheet. Place in freezer.
  • Once burritos are frozen (or nearly frozen), place in a large freezer bag.
  • To serve, remove the frozen burrito and place on a microwave safe plate. Microwave for 3-4 minutes (will depend on your microwave.) Burritos can be stored in the freezer for up to 3 months.
