Healthy Lemon Blueberry Bread – this healthier version of lemon blueberry bread is incredibly moist and not overly sweet.  Low in sugar and fat, this loaf also contains Greek yogurt which adds some extra protein.

Tart lemon, sweet berries, Greek yogurt, and coconut oil come together beautifully in this lightened up loaf.  You won’t miss the extra sugar at all!  This is another great option for breakfast or to satisfy your sweet tooth without the guilt.

If you felt the need to get a little more decadent, you could add a sweet glaze of lemon juice and powdered sugar.  Yum.

Healthy Lemon Blueberry Bread

Ingredients 

  • 1 1/2 cups white whole wheat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1 cup fat free plain Greek yogurt, or vanilla
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil, liquid form
  • 3 eggs
  • 2 tablespoons fresh lemon juice
  • 2 tsp lemon zest
  • 1 tsp vanilla
  • 1 1/2 cups frozen blueberries

Instructions

  • Preheat oven to 350 degrees.
  • Whisk together flour, baking powder, and salt in a medium bowl.
  • In a large bowl, whisk together sugar, yogurt, applesauce, coconut oil, eggs, lemon juice, lemon zest, and vanilla.
  • Gently stir frozen blueberries into flour mixture to coat them.
  • Add flour mixture to wet ingredients and fold until combined.
  • Pour batter into loaf pan coated with baking spray (I like the kind with flour added.) Bake for 55-60 minutes.
