Hey friends! Whether it’s Monday or any busy weeknight and you need to get dinner done fast, this recipe for Instant Pot Salsa Chicken is a life saver. Only three simple ingredients are needed to make this super versatile meal. Remember…cooking nutritious meals at home doesn’t have to be time consuming or complicated. Weeknight mealtime should never be an added stressor in our already busy lives. Sometimes it’s the simplest of meals that are naturally healthy and the most family friendly. Case in point, this recipe for Instant Pot Salsa Chicken!
One of my favorite things about Instant Pot meals is that I’m able to multi-task while dinner cooks. Instead of standing over the stove monitoring my food, I am able to let the Instant Pot do all the work while I tackle my to-do list. I also like to make this Salsa Chicken on Meal Prep Sunday to use in meals throughout the week. Burrito bowls are my favorite way to use it, but it’s also great in salads, tacos, and added to chili. If you’re on a gluten free or Paleo/Whole30 diet, you will find plenty of ways to incorporate this into your meals. And it’s inexpensive too!
What You’ll Need
2 lbs boneless skinless chicken breast (Butcherbox is my favorite organic chicken)
1 can diced tomatoes with green chilis
How to Make Instant Pot Salsa Chicken
Lay your chicken breasts in the Instant Pot and sprinkle generously with the Taco Seasoning.
Pour tomatoes over the chicken. You could also use a jar of your favorite salsa in place of the canned tomatoes.
Lock the lid and cook on Manual mode for 15 minutes. Let the pressure release naturally when complete.
Shred the chicken and return to the sauce. Serve immediately or refrigerate.
How to Use Instant Pot Salsa Chicken
Make Burrito Bowls with rice, beans, and your favorite toppings.
Substitute for sausage in these Healthy Freezer Breakfast Burritos.
Make Taco Salad by adding to a bed of lettuce and top with cheese, tomatoes, and avocado.
Add to chili or soup.
Use in tacos or enchiladas.
More Ways to Make Salsa Chicken
This recipe works great in the Slow Cooker too. Combine all ingredients and cook on Low for 6-8 hours or High for 3-4 hours. Then shred the chicken and return to the sauce.
Substitute boneless skinless chicken thighs for the chicken breasts.
Swap plain canned diced tomatoes or a jar of salsa for the diced tomatoes with green chilis.
Can you Freeze Salsa Chicken?
Yes, absolutely! This is a great recipe to make ahead or in bulk and save for future meals. Once cooled, place desired portions in freezer safe containers or bags. The Salsa Chicken will keep in the freezer for up to 6 months. To thaw, place container in the refrigerator overnight.

Instant Pot Salsa Chicken
Ingredients
- 2 lbs boneless skinless chicken breast
- 2 tablespoon taco & fajita seasoning, see homemade recipe below
- 15 ounce can diced tomatoes with green chilis
Instructions
- Place half of the salsa in the bottom of the Instant Pot. Add chicken breast and sprinkle with the taco seasoning. Pour remaining salsa over top of the chicken.
- Seal lid and set Instant Pot for 15 minutes on Manual setting. When cycle is complete, allow natural release of pressure.
- Remove chicken breasts and shred. Return to the pot and stir well.
