Instant Pot Taco Stuffed Pepper Soup {Whole30, Paleo} – healthy, hearty, and super easy, this soup is the perfect weeknight family meal and is Whole30/Paleo approved!

Hi Friends!  I’m kicking off 2018 with a new Monday post series, Instant Pot Monday!  Believe me when I say I know how hectic and totally exhausting Mondays can be for any busy family.  The weekend hangover is in full effect, everyone is crabby about returning to work and school, and the planned dinner menu is ruined because we forgot to take the meat out of the freezer.

When I need to get dinner on the table fast without tons of fuss or prep time, I always go to my Instant Pot.  Like the slow cooker, it’s the perfect tool for a “dump it and forget it” kind of meal but cooks in a fraction of the time.  Soups, stews, braised meats, even lasagna, can all be ready in under 30 minutes.

Fast and easy is important but family friendly dinners are also a top priority in our house.  Whatever I make, everyone eats.  One meal only.  To make myself, my husband, and two girls happy, it has to be SIMPLE, TASTY, and NUTRITIOUS (this recipe is a good example!)  Yes, there are hits and misses, but my kids have grown so much in what they will try and eat (and love!) because of this rule.

This Stuffed Pepper Taco Soup is easy, super delicious, and sure to satisfy even the picky eaters.  A recipe mish mash of stuffed peppers, chili, and tacos, it’s nutritious and flavorful, and freezes well.  It’s also made with totally clean, whole food ingredients, and is Whole30/Paleo approved.  This recipe includes cauliflower rice, which we have learned to love on our Whole30 journey, but brown rice would be great as well if you are not limiting grains/carbs.

Instant Pot Taco Stuffed Pepper Soup {Whole30, Paleo} - healthy, hearty, and super easy, this soup is the perfect weeknight family meal and is Whole30/Paleo approved!

Ingredients
  • 1 lb ground beef, turkey, or venison
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 4 oz. diced green chilies
  • 2 cups diced bell peppers
  • 1 15 oz. can diced tomatoes
  • 1 cup crushed tomatoes
  • 2 1/2 tablespoons homemade taco & fajita seasoning see recipe below
  • 2 cups low sodium chicken or beef broth
  • 2 cups cooked cauliflower rice or brown rice for non-Whole30/Paleo
Instructions
  1. Set Instant Pot to Saute mode.  Add ground meat and cook until browned.

  2. Add onion, garlic, green chilis, and peppers to the pot, cooking and stirring for another 1-2 minutes.

  3. Add tomatoes, crushed tomatoes, seasoning, and broth to the pot.  Stir to combine, seal the lid, and set for 10 minutes on Manual setting.  

  4. When cycle is complete, quick release pressure.  Ladle into bowls, adding a generous scoop of cauliflower rice to each bowl.
