Fresh Lowfat Apple Snack Cake

This one is from my childhood. It hits the spot every time. With your favorite comfy beverage of choice (mine is hot tea but coffee or a glass of cold milk would be quite nice too), it can be enjoyed as a snack, or for breakfast, or as a nighttime treat…really any old time of the day.
My mom’s original recipe included lots of butter and sugar. Although I still occasionally make her version (because it is sooooo good), I really wanted to enjoy these without the guilt. So I experimented with some thinned down recipes. My first attempt was just okay…I tried substituting ground dates for the sugar and although they were quite tasty, the texture came out a little gummy. So I tried again, and I think this version works – I cut the sugar in half and substituted coconut oil and applesauce for the butter. The flavor is still there and invokes that nostalgic feeling that I’m looking for in this dessert. Mom always added nuts and raisins but that’s not really my thing, so I go with the naked version. It’s your call!
Fresh Lowfat Apple Snack Cake
Ingredients
- 1 3/4 cups peeled chopped apples
- 1/2 cup sugar
- 1 1/2 cups white whole wheat flour, or regular flour
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 cup liquid coconut oil
- 1/4 cup unsweetened applesauce
- 1 egg, beaten
- 1/2 cup raisins, optional
- 1/2 cup chopped walnuts, optional
Instructions
- Preheat oven to 350 degrees.
- Peel and chop apples. Place in a large bowl, add sugar and let stand while preparing dry ingredients.
- In a separate bowl, sift flour, soda, salt, and spices.
- Blend egg, oil, and applesauce into apple/sugar mixture.
- Add dry ingredients to apple mixture, including raisins and nuts if using.
- Pour into 8X8 greased baking dish and bake for 30 minutes.
