Back to school is in full swing! What better way to bring a smile to your kid’s face than by including a sweet treat in their lunchbox? These tasty bites are my twist on a healthier monster cookie, without the flour, refined sugar, or butter/oil – just natural ingredients like peanut butter, oats, and coconut sugar.
My family adores these healthy monster cookies. They are so simple to make, my kids have even learned to make them. With only 6 ingredients, chances are you have everything you need in your pantry to make these right now!
How to Make Healthy Monster Cookies
These cookies are made in one bowl!
Start by stirring together the peanut butter, sugar, egg, and vanilla. Stir it well to combine.
Fold in the oats and the mini m&ms.
Scoop onto baking sheets and bake. Flatten slightly with your spatula if desired and let cool.
Variations on Healthy Monster Cookies
In place of the mini m&ms, try raisins or mini chocolate chips.
A reminder about oats…not all oats are gluten free so if this is a priority for you, be sure to look for that label.
Try a crunchy peanut butter for even more texture and crunch in the cookies.
For a cinnamon oat version, add 3/4 teaspoon ground cinnamon and replace the m&ms with raisins.

Mini Monster Cookies
Ingredients
- 1 cup peanut butter
- 3/4 cup coconut sugar, I prefer Madhava brand - see note below
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cup oats
- 1/3 cup mini M&Ms
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine peanut butter, sugar, egg, and vanilla. Mix well, until smooth. Add oats and M&Ms, combining well. Batter will be quite stiff.
- Using your hands, form 1 1/2 inch balls and place on a baking sheet. Bake for 12-14 minutes, until starting to brown. Remove from oven and slightly flatten each cookie using your spatula. Place cookies on a cooling rack.
