Back to school is in full swing!  What better way to bring a smile to your kid’s face than by including a sweet treat in their lunchbox?  These tasty bites are my twist on a monster cookie, without the flour, refined sugar, or butter/oil – just natural ingredients like peanut butter, oats, and coconut sugar.

My family adores these cookies.  They are so simple to make, my kids have even learned to make them.  With only 6 ingredients, chances are you have everything you need in your pantry to make these right now!

Mini M&Ms are my favorite for this recipe, but mini chocolate chips or raisins would also be a great substitute.  A reminder about oats…not all oats are gluten free so if this is a priority for you, be sure to look for that label.

Mini Monster Cookies

Mini Monster Cookies (Gluten Free) - A healthier take on the classic recipe, these Mini Monster Cookies are wholesome and yummy, perfect for kid's lunch or an after school snack. These gluten free treats contain only 6 ingredients and no butter or flour!

Ingredients 

  • 1 cup peanut butter
  • 3/4 cup coconut sugar, I prefer Madhava brand - see note below
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cup oats
  • 1/3 cup mini M&Ms

Instructions

  • Preheat oven to 350 degrees. 
  • In a large bowl, combine peanut butter, sugar, egg, and vanilla. Mix well, until smooth. Add oats and M&Ms, combining well. Batter will be quite stiff. 
  • Using your hands, form 1 1/2 inch balls and place on a baking sheet. Bake for 12-14 minutes, until starting to brown. Remove from oven and slightly flatten each cookie using your spatula. Place cookies on a cooling rack.

I have also used Madhava Natural Sweeteners Organic Coconut & Cane Sugar Better Baking Blend with great results.
