These Nutty Oatmeal Cranberry Energy Bites are a great alternative to store bought granola bars and offer a nice punch of protein-packed energy! They are sweet, nutty, healthy, and delicious all rolled into a cute little bite-sized treat.
This recipe takes literally no time to prepare and is also gluten free (just be sure to use GF oats.) I love the addition of crunchy peanut butter and ground walnuts, which packs even more nutty flavor into these tasty snacks. Nutty Oatmeal Cranberry Energy Bites
- 1 cup oats
- 3/4 cup ground walnuts
- 1/2 cup crunchy peanut butter
- 1/4 cup honey
- 2 tablespoons ground flax
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/4 cup dried cranberries
In a large bowl, combine oats, walnuts, peanut butter, honey, flax, cinnamon, and vanilla. Mix until everything is incorporated well (dough will be stiff.) Stir in cranberries.
Form into one inch balls and place on a waxed paper lined cookie sheet. Chill in refrigerator or freezer until set (at least 30 minutes.) Keep refrigerated in a closed container.
