These Nutty Oatmeal Cranberry Energy Bites are a great alternative to store bought granola bars and offer a nice punch of protein-packed energy! They are sweet, nutty, healthy, and delicious all rolled into a cute little bite-sized treat.
This recipe takes literally no time to prepare and is also gluten free (just be sure to use GF oats.) I love the addition of crunchy peanut butter and ground walnuts, which packs even more protein and nutty flavor into these tasty snacks. Honey and dried cranberries bring the sweetness and a touch of cinnamon is that extra flavor element that will remind you of a warm oatmeal cookie. Yum.

How to Make Nutty Oatmeal Cranberry Energy Bites
First, add the walnuts to a food processor and pulse until finely ground.
Combine the remaining ingredients with the ground walnuts. Add the cranberries (or other add-ins) last.
Form into bite sized balls and refrigerate until firm.
For storage, place in an air tight container and keep in the refrigerator.

- Add walnuts to a food processor and pulse until ground to a crumb like consistency.
- In a large bowl, combine oats, walnuts, peanut butter, honey, flax, cinnamon, and vanilla. Mix until everything is incorporated well (dough will be stiff.) Stir in cranberries.
- Form into one inch balls and place on a waxed paper lined cookie sheet. Chill in refrigerator or freezer until set (at least 30 minutes.) Keep refrigerated in a closed container.
