Chicken Caprese Skillet is a one-pan meal that is simple to prepare and a great way to enjoy classic caprese flavors! There’s nothing better than the combo of juicy tomatoes and fresh creamy mozzarella cheese. I love it on its own, on toasted crostini, and now in this Caprese Chicken dinner!
When there’s little time to throw dinner together, I always turn to one pan meals that require minimal prep. I have a few favorites in my arsenal (aka Sheet Pan dinner to the rescue!) and this Caprese Chicken Skillet will definitely be making its way into the rotation! Ingredients You’ll Need
- Boneless skinless chicken breast – thin cut or pounded thin (see tip below)
- Grape Tomatoes – I used a tri-color medley, but any variety will do
- Fresh Mozzarella Cheese
- Extra Virgin Olive Oil
- Seasonings – sea salt, black pepper, garlic powder
- Fresh basil leaves – whole leaves, or cut into ribbons
Ingredient Notes & Variations
Tomatoes – feel free to use any type of sweet cherry tomatoes or sliced fresh tomatoes.
Pesto – spread fresh or store-bought pesto over the chicken before baking.
Balsamic – Add a drizzle of balsamic vinegar before putting the chicken in the oven or a drizzle of balsamic glaze after cooking (see tip below.)
How to Make One Pan Caprese Chicken
- Preheat oven to 375 degrees.
- Season the chicken breasts on both sides with salt, pepper, and garlic powder.
- Heat the olive oil in a large deep skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes per side in the skillet. Remove from heat.
- Add the grape tomatoes to the pan. Arrange a slice of mozzarella over the seared chicken breasts.
- Place the skillet in the oven and bake for 15 minutes (internal temperature of the chicken should reach 165 degrees at the thickest part of the breast.)
- If desired, turn the broiler on in the last 2 minutes of cooking time until mozzarella is golden brown.
- Sprinkle with fresh basil and serve.
Serving Suggestions
Serve over spaghetti squash or pasta if desired.
Add a side of fresh green beans, roasted vegetables, a simple Italian salad, or garlic bread.
Tips & FAQs
What size/type of chicken breast should I use?
I like to buy the thin-cut chicken cutlets because they cook more evenly. If using a larger thicker chicken breast, you can slice it horizontally into two thinner pieces or pound it between pieces of plastic wrap until the chicken is about 1/2 inch thick.
How to store leftovers?
Place any leftovers in an airtight container and refrigerate for up to 2 days. Reheat in the microwave at 30 second intervals until warmed.
Can I add a balsamic drizzle?
Yes, absolutely, this would be an amazing addition! To make balsamic glaze, place 1/4 cup balsamic vinegar into a small saucepan and heat over medium low heat. Bring to a simmer and let it cook for about 15 minutes, until reduced and thickened. Drizzle the glaze over the chicken and tomatoes after baking.
Can you substitute shredded mozzarella?
In a pinch, it’s fine. I prefer fresh mozzarella because it melts beautifully and doesn’t contain anti-caking agents like pre-shredded cheeses.

Ingredients
- 1.5 lb boneless skinless chicken breasts
- 12 oz grape tomatoes, or cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 oz fresh mozzarella cheese
- fresh basil leaves

- Preheat the oven to 375 degrees.
- Add the oil to a large deep skillet and heat over medium high heat.
- Add the chicken breasts to the hot oil, searing for 3-4 minutes. Flip and cook for another 3 minutes until starting to brown.
- Turn off the heat. Add the tomatoes to the pan, around the chicken pieces.
- Arrange slices of mozzarella over the chicken and place the skillet in the oven. Bake for 15 minutes.
- Remove from oven and sprinkle with fresh chopped basil. Serve immediately.
