If you are looking for a super-fast weeknight dinner that everyone will enjoy, look no further!  This dish is a regular at our house, mainly because I love fajitas, but the simplicity earns it major bonus points.  The veggies and chicken could be prepped ahead for an even speedier throw-together meal.  I make my own taco seasoning and keep a good amount on hand, but you could also use a pre-made packet. 

If you decide to make your own seasoning, go for a double batch because it will get used up quick!  I recommend getting your kids involved in this process.  Not only will you save yourself a step but I guarantee they will love the measuring and the mixing…total win-win!  Put it all in a pretty little jar and have them design some cute labels too!  My daughter enjoys this so much, I bought her own supply of spices and little containers so that she can whip up a batch anytime.  She now has a few recipes in her repertoire and likes to give them away as gifts.  Too cute.

Slices your peppers, onion, and chicken.  Throw it all on a large baking sheet, drizzle with olive oil and the taco seasoning.  Toss to combine.

Toss it in the oven and bake for 15-18 minutes, stirring once during baking time.   Squeeze the juice of a lime over the chicken and veggies.  Serve it up in a big bowl with cilantro lime rice and avocado crème.  Or if you prefer, go with a traditional tortilla and your choice of toppings.  Another win-win. 🙂

One Pan Chicken Fajita Bowls with Avocado Creme

Ingredients 

  • 1 lb . chicken breast, sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 medium onion, sliced
  • 2 1/2 T . homemade taco seasoning, or 1 packet store bought
  • 2 T . olive oil
  • lime juice

Avocado Crème

  • 1 avocado
  • 2 T . plain greek yogurt, fat free
  • 1 T lime juice
  • 2 T water, or more if needed
  • salt and pepper
  • 1 T chopped fresh cilantro

Cilantro Lime Rice

  • 2 cups cooked rice
  • 2 T . fresh lime juice
  • 2 T . chopped cilantro

Instructions

  • preheat oven to 400 degrees.
  • place chicken, peppers, and onion on a large baking sheet. Sprinkle with taco seasoning and olive oil. Toss to combine.
  • Bake for 15-18 minutes, stirring once, until chicken is cooked through. Squeeze juice from 1/2 lime over chicken and veggies.
  • For avocado crème, combine all ingredients in food processor and blend well.
  • For cilantro lime rice, stir lime juice and cilantro into cooked rice.
  • Serve chicken and veggies over rice, topped with avocado crème. Or serve with soft corn or flour tortillas and your favorite toppings.
