Made with wholesome, real ingredients and a tasty homemade taco seasoning blend, Easy Taco Soup is fast, delicious, and makes excellent leftovers. There are plenty of ways to make this your own (see variations below) and it’s even great for making ahead and freezing.

Of course, as is the case with tacos, it can be loaded up and enjoyed with all your favorite fixings! My favorite combo is a topping of sour cream and cilantro. Shredded cheese, avocado, jalapenos, and crushed tortilla chips are also great options for topping this soup.

How to Make Taco Soup

The beauty of this recipe is its simplicity and versatility. It can be made on the stovetop, Instant Pot, or slow cooker.  For each method, start by browning the ground beef. If cooking on the stovetop, add the green pepper and onion and cook until just tender. Then add the remaining ingredients and bring to a simmer.

For cooking in the Instant Pot and slow cooker, begin by browning the ground beef (use the Saute mode for Instant Pot.) Next, add all the remaining ingredients, stir, and cook on the Manual mode for 8 minutes for the IP and 4-6 hours on Low for the slow cooker.

This Taco Soup recipe requires simple ingredients that you likely have in your refrigerator or pantry. It can also be easily modified with whatever you have on hand. Here are a few suggestions for variations of Easy Taco Soup.

Use ground turkey, ground chicken, or ground venison in place of the beef.

Add in other veggies such as red and orange bell peppers, celery, or zucchini.

Any variety of beans will work in this recipe – try kidney, white, or black beans for a different variation.

Quick and Easy Taco Soup Recipe (Gluten Free) - loaded with beef, veggies, and your favorite taco toppings, this Easy Taco Soup Recipe is a cinch to throw together for a tasty family meal!

Ingredients 

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 14 ounce diced tomatoes
  • 2 tablespoons homemade taco seasoning, see recipe below
  • 15 ounce pinto beans
  • 2.5 cups broth
  • 1 cup corn kernels
  • 1 teaspoon sea salt

Instructions

  • Heat a large pot over medium high heat. Add ground beef and cook, breaking into crumbles for 3-4 minutes.
  • Add the green peppers and onions to the beef and continue cooking until the beef is completely browned.
  • Add tomatoes, beans, taco seasoning, broth, corn, and salt to the pot. Bring to a simmer and reduce heat to low. Simmer for 10-15 minutes.
  • Serve soup with taco toppings, if desired.
