Sheet Pan Sausage and Potatoes (Paleo Whole30) – this super simple one pan dinner of chicken sausage, potatoes, and green beans is healthy and family-friendly, a weeknight winner!
This recipe for Sheep Pan Sausage and Potatoes if a family favorite and my go-to on busy weeknights. I love sheet pan meals when I’m not sure what to make and need a quick, no-fuss dinner on the table fast. Just three ingredients are tossed together with olive oil and a homemade garlic salt seasoning in this one-pan dish. Ready in 30 minutes, it’s a meal that everyone loves and the leftovers are excellent!
Aidell’s brand makes my favorite chicken apple sausage that is also Whole30 compliant. It’s hard to find sausage with no sugar and other additives but this one fits the bill and is super tasty. The sausage and potatoes are perfectly complemented by the green beans and homemade garlic salt seasoning. For non-Paleo/Whole30 diets, other smoked turkey/chicken sausages could be substituted and you can easily add in other veggies you have on hand (see tips below.) I love the versatility and simplicity of this recipe. Clean eating at its best!
This could also be made ahead on your meal-prep day for easy lunches during the week. Enjoy!
How to Make Sheet Pan Sausage and Potatoes
Begin by tossing the potatoes, oil, and seasoning on a large sheet pan. The potatoes need a head start in the oven because they take longer to cook than the other ingredients.
Add the sliced sausage and green beans and toss everything together well. Continue baking for an additional 10-15 minutes until everything is beginning to brown and the potatoes are tender.
Sausage Sheet Pan Dinner Variations
Try adding in other veggies like broccoli, onion, brussels sprouts, and red bell peppers.
Red potatoes are also great in place of the yukon potatoes.
Salt and pepper are perfectly fine in place of the garlic salt seasoning. Use 2 teaspoons kosher salt and 1/2 teaspoon black pepper.
For an extra flavor boost, dip the sausage and potatoes in some Homemade Ranch Dressing.

Ingredients
- 16 oz. package Chicken & Apple Sausage, sliced, (Aidells brand or other compliant brand)
- 1 lb yellow potatoes, cubed
- 1 lb fresh or frozen green beans
- 1 tablespoon olive oil
- 1 tablespoon garlic salt seasoning, see recipe below
Instructions
- Preheat oven to 425 degrees. Line a large baking pan with parchment paper. Place potatoes, olive oil, and seasoning on the sheet pan and toss to combine. Bake for 15 minutes.
- Remove from oven, add chicken sausage and green beans to the pan and toss well. Bake for an additional 10-15 minutes, until potatoes are tender.

Do you cook the sausage first, before baking?
Nope, the chicken sausage is pre-cooked!
I’ve found the sausage casing to be tough, so always remove it before cooking….anyone else?
Potatoes take a lot longer than 20 minutes to cook.
Absolutely Delicious. I had to go back for seconds. I didn’t cook this, my wife did, and as she watched me go back for seconds (it’s a good thing she doubled the recipe), she commented on how easy it was to prepare. While I don’t know anything about Paleo other than it being a diet, it seemed to fit into my food tracker just fine. And for the record, I don’t recall EVER having posted a comment about a recipe before, so Thank You!!

I’m trying this tonight though I think I’m going to brown up the sausage a little first then put it on a baking pan with a mix of some yellow, red and green bell pepper half slices along with some white onion half slices then everything else on your recipe. Sounds so good. Lol I bought some apple chicken sausage and was unsure what exactly to make with it and I’m pretty sure this is it. Thank you as you inspired me !
