Sheet Pan Mediterranean Chicken & Veggies (Gluten Free) – this sheet pan meal is super simple to make and bursting with flavor! Chicken, chicken sausage, plenty of veggies, and a homemade Mediterranean blend come together for a nutritious and delicious meal! Whole30 option included.
Guys, I’ve been slacking! It’s been a while since I brought you a new sheet pan recipe! By far, one of my favorite ways to get a healthy meal on the table fast is a good sheet pan meal recipe. In case you’re new around here, I am all about simple, family friendly meals that fit a clean eating lifestyle. When I need to get dinner done quickly, sheet pan meals are my go-to solution. They are naturally nutritious, easy to throw together, and can be easily customized to fit your family.
This Sausage & Veggies Sheet Pan is on regular rotation and is one of my family’s favorite meals. But I thought it was time to change things up a little. I’m always trying new combinations and variations with my sheet pan meals and have definitely found a winner with this Mediterranean Chicken and Veggies. With my homemade Mediterranean seasoning blend and a combo of my favorite Butcher Box chicken breast and chicken sausage, this meal is huge on flavor. My kids said I should name this recipe Pizza Sheet Pan because it smells just like a homemade pizza baking in the oven!
For the veggies in this recipe, I used bell peppers, baby potatoes, and onion. This could be modified to include your favorite veggies such as zucchini, broccoli, cherry tomatoes, or cauliflower. I was pretty excited to find some Artichoke Garlic Chicken Sausage at the grocery store and thought it would be perfect with this flavor profile. If you can’t find something similar, you could always omit the sausage and double up on the chicken!
I think what really makes this recipe special is the toppings. I like to add some chopped Kalamata olives, feta cheese, and fresh chopped parsley to really highlight the Mediterranean flavors. Of course, this is totally optional – as with any sheet pan meal, make it your own!
How to Make a Sheet Pan Meal
First, invest in some nice large, heavy duty sheet pans. These are my favorite and they come in a set of three different sizes.
Start with your protein, such as chicken, boneless pork chops, shrimp, flank steak, or sausage.
Next decide on a flavor profile. I like to use my Homemade Seasoning Blends for convenient, easy flavor add-ins.
Choose your veggies. I’ve found that the best vegetables for roasting include broccoli, cauliflower, yellow potatoes, onions, brussels sprouts, bell peppers, etc.
Ensure that your ingredients have even cooking times and adjust the size of the pieces accordingly, so that everything bakes in roughly the same amount of time.
If you have ingredients that will require extra baking time, start them first in the oven and add your other ingredients to the pan later.
Variations on Sheet Pan Mediterranean Chicken & Veggies
I found some Aidells brand Artichoke and Garlic Chicken Sausage at my local grocery store but other sausages could be substituted or it could be left out completely.
Substitute other potatoes if desired. I’ve found that baby potatoes, especially Yukon gold, are best because they are naturally a little softer and cook faster. If you use another variety be sure to chop them small enough so that they cook through in the same amount of time as your other ingredients.
Use any combo of veggies that you prefer, but be sure they have similar cooking times.
The toppings are optional. For a Whole30 version, omit the feta cheese.
For Keto diets, omit the potatoes.

Ingredients
- 1 lb boneless skinless chicken breast, cubed
- 1 lb baby potatoes, cubed
- 10 ounces Artichoke Garlic Chicken Sausage (Aidells), cut into chunks
- 2 bell pepper (any colors), cut into chunks
- 1/2 yellow onion, cut into chunks
- 2 tablespoons avocado oil
- 1 tablespoon Homemade Mediterranean Seasoning, see below for recipe
- Kalamata Olives, for topping
- Feta Cheese, for topping (omit for Whole30)
- chopped fresh parsley
Instructions
- Preheat oven to 400 degrees. Line a large baking sheet with parchment paper, if desired. Combine chicken, potatoes, sausage, onion, peppers, oil, and seasoning on the baking sheet. Toss well.
- Bake for 20-25 minutes, or until chicken is cooked through. Serve topped with olives, feta cheese, and parsley.
