When I need a quick side dish or lunch idea, I love to get creative with a bag of broccoli slaw.  This Whole30 Curried Broccoli Slaw Recipe came together on my last round of Whole30 and ended up being a huge favorite.  It’s full of crunchy veggies and almonds, creamy mayo, sweet apples, and spicy curry.  The perfect combination!

Mann’s makes the best bagged slaw mixes, perfect for adding to salads, stir fries, even soups.  One of my favorites is the Rainbow Salad Blend, which contains broccoli, cauliflower, carrots, and red cabbage.  Like all of their blends, it makes a great base for adding in different flavors and textures for a super satisfying meal.  Not to mention it’s so much more interesting and nutritious than boring old lettuce!

Curried Broccoli Slaw Recipe

I like to take some help from bagged slaws whenever possible – they are such a time saver and so convenient.  I have several favorite brocooli slaw recipe versions, but I especially love this one without any sugar loaded dressing.  The curry spiced mayo adds big flavor, is heart healthy, and keeps me full to my next meal.

In the time it takes to chop an apple, this salad is nearly ready.  The ingredients are all ones that I regularly have on hand, which makes this the perfect thing to whip up in a pinch.  I prefer to use my own homemade avocado oil mayonnaise but this Whole30 compliant brand is super popular and delicious as well.

Just mix everything together in a big bowl and you’re done!  This broccoli slaw is great eaten right away and even better after it hangs out for a bit so the flavors can intensify.

Tips & Variations for Curried Broccoli Slaw

This is a great recipe to add to your meal prep routine.  If I make it on Sunday, I pack up individual servings in these glass bowls and it’s good for 2-3 lunches during the week.

To make this a complete meal, add some Instant Pot Shredded Chicken or serve along with your favorite protein.

Other bagged slaw mixes also work well in this broccoli slaw recipe.

Substitute cashews or other nuts for the almonds.

Whole30 Curried Broccoli Slaw Recipe

Whole30 Curried Broccoli Slaw - crunchy, satisfying, and nutritious, this salad packs a huge punch of flavor and is the perfect addition to any meal!

Ingredients 

  • 12 ounce Mann's Rainbow Salad
  • 1 large apple, cut into thin slices
  • 1/4 cup slivered almonds
  • 1 tablespoon chopped fresh cilantro
  • 1/4 cup Whole30 mayonnaise
  • 1 teaspoon curry powder
  • 1/4 teaspoon sea salt

Instructions

  • Combine mayonnaise, curry powder, and salt in a small bowl.  Mix well.
  • In a large bowl, combine rainbow salad, apple, almonds, and cilantro.  Toss well.
  • Add curry mayonnaise and stir well, coating the salad completely.  Garnish with additional cilantro, if desired.  Serve immediately or refrigerate.
