One of my family’s favorite breakfast items is sausage. My kids can make a plate of it disappear in a flash. I also happen to love the flavor of sausage, just not the greasiness that usually comes with it. I’ve also struggled to find store bought sausage that doesn’t contain sugar and other additives. So homemade it is!
When I first started making my Homemade Breakfast Sausage, it was because my husband and I were on a round of Whole30. Although there are a few Whole30 compliant brands out there, they’re hard to come by. Since I don’t have any specialty stores like Trader Joes or Whole Foods nearby, I resorted to making my own. The beauty of it is they are super simple to make and you control the ingredients!
For this version, I used ground chicken and a fresh jalapeno from my garden. Add a little onion, garlic powder, and salt and pepper, and you’re done! The slight kick from the jalapeno is just right and not too spicy for these homemade breakfast patties. They are also fun to change up with different flavors and ingredients – see my suggestions below!
These Jalapeno Chicken Sausage Patties couldn’t be easier to throw together and are perfect for meal prep day and storing in the freezer. I love to have these on hand for quick breakfasts during the week. They reheat quickly and are great with some eggs and a side of fruit!
Homemade Chicken Sausage Patties Variations
Use ground pork or turkey in place of the ground chicken (or any mix of the three).
Substitute finely minced green or red bell pepper for the jalapeno if you’re not a fan of spicy food.
Add some finely diced apples, mango, or pineapple for a sweet and spicy flavor profile.
Try other varieties of peppers or increase the amount for additional heat.
Make larger size patties and serve as a burger/slider with toppings!

Place all ingredients (except oil) in a bowl and combine well. Form mixture into patties.
Heat oil in a large skillet over medium high heat. Cook patties, flipping once throughout cooking, about 4 minutes per side, until browned.
Drain patties on paper towels. Repeat with remaining patties, adding more oil to the pan as necessary.
Serve immediately or store in refrigerator. Patties also freeze well.
