Ingredients
1cuppeanut butter
3/4cupcoconut sugarI prefer Madhava brand - see note below
1egg
1teaspoonvanilla
1 1/4cupoats
1/3cupmini M&Ms
Instructions
Preheat oven to 350 degrees.
In a large bowl, combine peanut butter, sugar, egg, and vanilla. Mix well, until smooth. Add oats and M&Ms, combining well. Batter will be quite stiff.
Using your hands, form 1 1/2 inch balls and place on a baking sheet. Bake for 12-14 minutes, until starting to brown. Remove from oven and slightly flatten each cookie using your spatula. Place cookies on a cooling rack.
