  • 1 lb ground beef, turkey, or venison
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 4 oz. diced green chilies
  • 2 cups diced bell peppers
  • 1 15 oz. can diced tomatoes
  • 1 cup crushed tomatoes
  • 2 1/2 tablespoons homemade taco & fajita seasoning see recipe below
  • 2 cups low sodium chicken or beef broth
  • 2 cups cooked cauliflower rice or brown rice for non-Whole30/Paleo


  • Set Instant Pot to Saute mode.  Add ground meat and cook until browned.
  • Add onion, garlic, green chilis, and peppers to the pot, cooking and stirring for another 1-2 minutes.
  • Add tomatoes, crushed tomatoes, seasoning, and broth to the pot.  Stir to combine, seal the lid, and set for 10 minutes on Manual setting.  
  • When cycle is complete, quick release pressure.  Ladle into bowls, adding a generous scoop of cauliflower rice to each bowl.
