  • 1 1/4 cups oats gluten free if desired
  • 3/4 cup pumpkin puree
  • 1/4 cup unsweetened applesauce
  • 3 Medjool dates
  • 2 eggs
  • 3 tablespoons almond milk
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice see homemade recipe below
  • 1/4 cup dark chocolate chips optional use dairy free chips for DF


  • Preheat oven to 350 degrees.  Prepare a mini muffin tin with cooking spray.
  • Add all ingredients (except chocolate chips) to a high speed blender.  Process until smooth.
  • Stir in the chocolate chips and pour mixture into muffin tin.  Bake for 12 minutes.
