Ingredients

  • 1 lb chicken breast cubed
  • 1 15 oz can chickpeas drained
  • 1 15 oz can petite diced tomatoes
  • 1 15 oz can coconut milk
  • 1 cup chopped bell peppers I used yellow and red
  • 1 medium onion diced
  • 1 cup diced yellow potatoes about 4 small
  • 1 1/2 tsp minced garlic
  • 2 tablespoons curry powder
  • 1 tsp garam masala
  • 1 tablespoon cilantro paste optional
  • Fresh cilantro

Instructions

  • Combine all ingredients in a slow cooker and cook on high for 5 hours or low for 8 hours.
  • Serve over rice and top with fresh cilantro.
