  • 1 cup chopped cherry tomatoes
  • 1 large avocado diced
  • 1/2 cup diced English cucumber
  • 1/4 cup diced red onion
  • 1/2 cup crumbled feta
  • 1/4 cup chopped kalamata olives
  • 1 tsp fresh lemon juice
  • 1/2 tablespoon red wine vinegar
  • 1 tablespoon avocado oil or olive oil
  • 1 tablespoon chopped fresh parsley
  • salt and pepper


  • Combine all ingredients together in a bowl.  Stir just to combine.  Do not over mix as avocado will break down and become mushy.
  • Add salt and pepper as desired to taste.
