Servings: 12 servings
- 6 large eggs
- 3 tablespoons avocado oil mayo or mayo of your choice
- 2 tablespoons finely minced dill pickle
- 1 teaspoon dill pickle juice
- 1 teaspoon dijon mustard
- sea salt to taste
Pour one cup of water into the Instant Pot. Place the trivet in the pot and arrange the eggs on the trivet.
Cook on manual setting for 5 minutes. When cycle is complete, allow 3-4 minutes of natural release then manually release remaining pressure.
Place eggs immediately in an ice water bath. Wait about 5 minutes, or until cool enough to handle and peel the eggs.
Slice eggs in half lengthwise. Remove yolks and place in a separate bowl.
Add remaining ingredients to the egg yolks and combine well. Scoop or pipe egg yolk mixture into the egg whites. Sprinkle with paprika if desired.
