  • 1.5 lbs boneless, skinless chicken thighs
  • 1.5 tablespoons avocado oil or olive oil
  • 1/4 cup coconut aminos
  • 1.5 tablespoons Dijon mustard
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons minced garlic


  • Combine avocado oil, coconut aminos, Dijon, rosemary, and garlic in a small bowl. Whisk well.
  • Add trimmed chicken thighs to a large plastic bag or glass baking dish. Pour the marinade over the chicken and place in refrigerator for at least 30 minutes.
  • Preheat grill to medium high heat. Grill chicken thighs for 4-5 minutes per side, or until cooked through.
