Easy Cream of Broccoli Soup Recipe (Whole30 Paleo Keto) - you won't believe how simple and delicious this Cream of Broccoli Soup recipe is - only 4 ingredients needed and it can be made on the stovetop or in the Instant Pot! Dairy and Gluten Free.
Servings: 8 cups
- 6 cups broccoli florets
- 2.5 cups vegetable broth or low sodium chicken broth
- 1 cup full fat canned coconut milk
- 2 teaspoons Homemade Garlic Salt Seasoning
For the Stovetop
Add all ingredients to a large stockpot. Bring to a boil over medium high heat.
Reduce heat and simmer for 10-15 minutes, until broccoli is tender.
Remove from heat and puree the soup with an immersion blender until creamy.
For the Instant Pot
Add broth, coconut milk, and seasoning to the pot. Stir to combine.
Add the broccoli to the pot. Seal lid and cook for 6 minutes on the Manual setting. Release pressure manually.
Using an immersion blender, puree the soup until creamy.
