Equipment

  • Instant Pot
  • Immersion Blender

Ingredients

  • 6 cups broccoli florets
  • 2.5 cups vegetable broth or low sodium chicken broth
  • 1 cup full fat canned coconut milk
  • 2 teaspoons Homemade Garlic Salt Seasoning

Instructions

For the Stovetop

  • Add all ingredients to a large stockpot. Bring to a boil over medium high heat.
  • Reduce heat and simmer for 10-15 minutes, until broccoli is tender.
  • Remove from heat and puree the soup with an immersion blender until creamy.

For the Instant Pot

  • Add broth, coconut milk, and seasoning to the pot. Stir to combine.
  • Add the broccoli to the pot. Seal lid and cook for 6 minutes on the Manual setting. Release pressure manually.
  • Using an immersion blender, puree the soup until creamy.

Notes

Homemade Garlic Salt Seasoning Blend Recipe:
3 tablespoons kosher salt
2 teaspoons garlic powder
1 tablespoon dried minced garlic
1 tablespoon coarse black pepper
1 teaspoon sea salt
