Buffalo Turkey Meatballs (Whole30 Paleo)

Ingredients

  • 2 lbs ground turkey
  • 1/2 cup almond flour
  • 1/3 cup very finely minced carrots
  • 1/3 cup very finely minced celery
  • 1 large egg
  • 1 teaspoon minced garlic
  • 1/2 cup (divided) Franks Red Hot Sauce
  • 1 teaspoon salt
  • Homemade Whole30 Ranch Dressing (or other compliant dressing)

Instructions

  • Preheat oven to 400 degrees.  Prepare a baking sheet with parchment paper.
  • In a large bowl, combine ground turkey, almond flour, carrots, celery, egg, garlic, 3 tablespoons of the hot sauce, and salt.  Using your hands, mix until combined but do not overwork the mixture.
  • Roll mixture into 1 1/2 inch meatballs and place on prepared baking sheet.  Bake for 15-16 minutes until cooked through.
  • When slightly cooled, toss meatballs in remaining hot sauce and serve with Whole30 Ranch Dressing or dressing of choice.
