- 1 red bell pepper diced
- 15 ounce low sodium black beans
- 15 ounce low sodium white beans
- 15 ounce diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 2 teaspoon minced garlic
- 1 teaspoon salt
- 1 lb boneless skinless chicken breasts
- 1 1/2 cups enchilada sauce homemade or canned
Combine all ingredients in a slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
Remove chicken, shred, and return to the slow cooker. Serve topped with cilantro or other chili toppings of your choice.
