Ingredients

  • 2 chicken breasts
  • 1 16 oz package frozen vegetables for soup I used Birdseye brand
  • 4 cups low sodium chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 cup flour
  • 1 cup fat free milk
  • 1 1/2 tsp salt

Instructions

  • Place the chicken breasts in the bottom of a slow cooker. Top with vegetables, broth, thyme, and pepper.
  • Cook on High for 3-4 hours or Low for 6 hours.
  • Remove chicken from slow cooker and shred.
  • Whisk together flour and milk, making a slurry. Pour into the slow cooker and stir to combine.
  • Stir in chicken and salt. Cook for another 15 minutes until slightly thickened.
