Ingredients

Whole30 Tzatziki Sauce

  • 1/2 cup homemade avocado oil mayo or compliant brand
  • 1/4 cup full fat coconut milk
  • 1/2 tablespoon red wine vinegar
  • 1 tablespoon avocado oil
  • 1 teaspoon kosher salt
  • 1 teaspoon minced garlic
  • 1/2 cup finely chopped English cucumber
  • 1/2 teaspoon dried dill

Instructions

  • Add sliced onions to the pot.  Combine avocado oil, lemon juice, broth, and garlic and pour over the onions.  Place chicken breasts on top and sprinkle generously with 1 1/2 tablespoons of the Lemon Pepper seasoning.  
  • Seal lid and cook under Manual pressure for 15 minutes.  When cycle is complete, let pressure release naturally (about 10 minutes.)
  • Remove chicken and set aside.  Set the pot to saute and simmer the liquid until reduced by half. 
  • Chop or shred the chicken and return to the pot.  Stir in remaining lemon pepper seasoning..  Serve chicken with favorite toppings such as tomatoes, cucumbers, red onions, olives, and tzatziki sauce.

For the Whole30 Tzatziki Sauce

  • Combine all the ingredients except cucmbers in a small bowl.  Whisk well.  Stir in the cucumbers and keep covered in the refrigerator.
