- 1 red bell pepper finely diced
- 1 green bell pepper finely diced
- 3 Roma tomatoes seeded and diced
- 1 cup frozen corn kernels
- 15 oz black eyed peas drained and rinsed
- 15 oz low sodium black beans drained and rinsed
- 1/2 cup finely diced red onion
- 3 tablespoons chopped cilantro
- 1/4 cup avocado oil
- 2 tablespoons apple cider vinegar
- 1 1/2 tablespoons sugar
- 1 teaspoon sea salt
Combine bell peppers, corn, black eyed peas, black beans, red onion, and cilantro in a large bowl.
In a mason jar, combine the oil, vinegar, sugar, and salt. Seal the lid and shake vigorously until well combined.
Pour the dressing over the veggies and toss to combine.
Cover and refrigerate until ready to serve.
