Skinny Chicken Broccoli Macaroni & Cheese

Ingredients

  • 2 boneless skinless chicken breasts, diced
  • 2 cups broccoli florets
  • 12 oz dried pasta (any shape)
  • 2 cups low sodium chicken broth
  • 1 1/2 cups skim milk
  • 1 tsp minced garlic
  • 1 tsp salt
  • black pepper to taste
  • 1 tablespoon low fat cream cheese
  • 1/3 cup parmesan cheese

Instructions

  • Spray a large deep skillet with cooking spray and cook chicken over medium high heat until no longer pink. 
  • Add broccoli, pasta, broth, milk, garlic, salt, and pepper and bring to a boil. Reduce heat and simmer 10-12 minutes, stirring occasionally until pasta is cooked al dente. 
  • Stir in cream cheese and parmesan. Serve immediately.
