Whipped Ricotta & Tomato Avocado Crostini

Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup feta
  • 2 tsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp kosher salt
  • 3/4 cup diced tomatoes
  • 3/4 cup diced avocado
  • 1 1/2 tablespoons balsamic dressing
  • 1 baguette sliced
  • additional olive oil for brushing on bread

Instructions

  • Preheat oven to 400 degrees. In a small bowl, combine tomato, avocado, and balsamic dressing. Set aside or refrigerate until ready to use. Place baguette slices on a baking sheet, brush lightly with olive oil, and cook for 6-8 minutes, until toasted. Let cool.
  • In a food processor, combine ricotta, feta, olive oil, lemon juice, and salt. Pulse until smooth and creamy.
  • Smear whipped ricotta on baguette slices and top with marinated tomatoes and avocadoes. Sprinkle with kosher salt if desired and serve.
