- 1 1/2 lbs yukon gold potatoes cubed
- 1/4 cup finely diced green bell pepper
- 1/4 cup finely diced red bell pepper
- 1/4 cup finely diced yellow onion
- 1 tablespoon Avocado Oil
- 2 teaspoons Homemade Seasoned Salt see recipe below
Cube the potatoes and finely dice the bell peppers and onion.
Add the potatoes, peppers, and onions to a large bowl and toss with the avocado oil and seasoned salt.
Arrange mixture in the Air Fryer basket and cook at 400 degrees for 20-22 minutes, shaking the basket every 5 minutes.
