- 1 lb boneless skinless chicken breast
- 1 egg beaten
- 1 cup pork panko see instructions below
- olive or avocado oil spray
To make pork panko, place pork rinds in a food processor and pulse until they are fine crumbs and pour into a shallow bowl.
Cut chicken into strips and sprinkle with salt and pepper.
Dip chicken in egg, then pork panko,, coating on all sides. Place in the air fryer basket (lined with parchment) and lightly spray with the oil.
Set the fryer at 400 degrees and cook for 10-12 minutes, flipping once throughout cooking.
