- 1-1 1/2 lbs boneless skinless chicken breasts
- 3 tablespoons avocado oil (or olive oil)
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 2 tablespoons chopped fresh cilantro
Combine oil, lime juice, zest, salt, cumin, garlic, and cilantro in a small bowl. Whisk well.
Place chicken breasts in a glass dish or ziploc bag. Pour marinade over chicken and marinate for at least one hour in the refrigerator.
Preheat grill (or grill pan). Grill chicken 4-5 minutes per side, until cooked through and no longer pink.
